There’s nothing quite like a hot stack of pancakes on a Saturday morning.
The butter and syrup dripping off the edges is the best way to motivate your kids to get up and at ’em at a decent hour.
But gone are the days where one simply dumps batter and water into a bowl.

1. Pumpkin spice pancakes

Ingredients:
- 2 tablespoon vegetable oil
- 4 whipped egg whites
- 1 cup half & half
- 1-ounce melted butter
- 2 eggs
- 1/2 teaspoon baking powder
- 1 cup pumpkin puree
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/16 teaspoon allspice
- 1/16 teaspoon cloves
- 1/16 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 cup pastry flour
- 1/4 cup sugar
Directions:
Sift all the dry ingredients together. Combine the whole eggs, half & half and pumpkin puree in a bowl. Add the flour mixture and stir, but don’t mix it too much. Add melted butter, and gently fold in half of the egg whites. When they’re almost mixed in, add the rest of the egg whites and fold.
2. Peanut butter double-chocolate pancakes

- 2 sliced bananas
- 1/2 cup baking chocolate (chopped)
- 1 cup peanut butter
- 1 egg
- 1 1/4 cups milk
- 1/4 cup unsweetened baking cocoa
- 1 cup pancake mix
Directions:
In a large bowl, add cocoa, milk, egg and pancake mix and stir until blended. Add chopped chocolate and mix. Top with peanut butter and sliced bananas.
3. Oatmeal cookie pancakes

- 1/2 stick butter
- 3/4 cup raisins
- 2 bananas (mashed)
- 1 teaspoon vanilla extract
- 2 large eggs
- 3/4 cup whole milk
- 1/4 cup chopped walnuts
- 3/4 cup sour cream
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/4 cup melted butter
- 1 cup old fashioned oats
Directions:
In a large bowl, mix all of the dry ingredients together. Grab another bowl and mix all of the wet ingredients together. Combine the wet with the dry ingredients, and fold in the raisins and mashed bananas. Stir the melted butter into the mixture.
4. Sweet potato pancakes

Ingredients:
- 1 cooked sweet potato (peeled and pureed)
- 2 whole eggs
- 4 teaspoons melted butter
- 2 cups milk
- Pinch of nutmeg
- 1 teaspoons cinnamon
- 2 tablespoons brown sugar
- 4 teaspoons baking powder
- 1 cup whole wheat flour
- 1 cup all-purpose flour
Directions:
Mix all of the ingredients in a large bowl until smooth.
5. Strawberry cheesecake pancakes

Ingredients:
- 2 cups frozen cheesecake (chopped)
- Pinch of salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 1/4 cups buttermilk
- 1 1/4 cups all-purpose flour
- 2 tablespoons seedless strawberry jam
- 1 1/2 cups strawberries (hulled and sliced)
Directions:
Mix the jam, strawberries and 2 tablespoons of warm water in a bowl, and set aside. Preheat your oven to 200°F. Add the buttermilk, flour, sugar, vegetable oil, baking soda, baking powder and salt to your blender, and pulse until smooth. Dump it all into a bowl, and then add the cheesecake pieces (keep them intact).
